First Impressions of Hinoura Ajikataya Santoku

Overall, this is an excellent kitchen knife and surprisingly good value.
Probably not a collectors piece (no hammer textures or Damascus), but a superb kitchen tool. The craftsmanship and finish are top notch. Balance is nice, maybe 1 cm forward of the choil (Ago).
Needless to say that it takes a very keen edge and is ready to go out of the box. I tidied up the edge with a leather strop and some honing compound. Being carbon steel and iron, this knife must be cared for to protect from rust, but in return I think it will provide many years of service.
Highly recommended.
