A fine carving knife by Sakamitsu, as usual; the steel takes a fine hard edge without being brittle.

Do take note that flattening the ura side will take quite a bit of time due to the length of the cutting edge.

I chose to flatten the ura side up to around halfway point from the tip since that's the more useful part of the knife. It will flatten out over multiple sharpening sessions, eventually!
