Whether steel or stainless steel knives, we recommend a rough grinding stone (#200-#400 approx.), a medium grinding stone (#1000 approx.) and a finishing stone (#3000-#4000).
Rough grindstone: For correcting spills and edges. (#220 to #400)
Medium grindstone: For daily maintenance. For cutting blades. (#800-#2000)
Finishing wheel: For superior sharpness. (#3000 to #5000)
Super-finishing wheel: For even finer finishing. (#8000 to #12000)
